Zesty Lemon Cake Best
Ingredients1 x cup Greek yogurt 1 x cup of sugar 1 x tsp vanilla essence 3 x egg lightly beaten 1 x lemon juiced zested 1/2 x cup vegetable oil 1 1/2 x cup self-raising flour 1/2 x tsp salt 1 x tsp baking powder Lemon Syrup
1/3 x cup lemon juice 1/3 x cup sugarInstructionsWhisk yogurt, sugar, essence, eggs, lemon zest, and juice in a bowl. Add the vegetable oil and whisk again well. In another bowl, stir together the sifted flour, salt, and baking powder. Add this to the wet ingredients. Stir to blend. Place in a greased cake tin and bake at 180C for approximately 40 minutes. Dissolve lemon juice and sugar in a pot over low heat, stirring until sugar has dissolved. Pour syrup over the cake.Enjoy
