Poached Egg with Tomato, Cheese, and Spinach Pasta

Poached Egg with Tomato, Cheese, and Spinach Pasta

Ingredients


2 x ounces uncooked whole wheat penne pasta
1 x tablespoon olive oil
2   x tomatoes, cored and chopped
a pinch of salt and pepper
1 x cup loosely packed baby spinach
2 x tablespoons nutritional yeast flakes
1/4 x teaspoon paprika
2 x tablespoons fresh basil, chopped
1 x large egg
1/2 x ounce Parmesan, grated

Directions

Boil the penne pasta and add some oil and salt.  Wait for a few minutes until firm and drain. Prepare the skillet and add the oil. Put the tomatoes in the pan and sprinkle some salt and pepper. Mix well the ingredients until cook. Add the spinach, yeast, and paprika while stirring until the other ingredients get cooked very well.

Mix and add the penne pasta and basil and then low heat. Remove the shells of the egg and put it into the bowl carefully not break the yolk. Prepare a small pan that has 5 inches of water with low heat and until simmering. Then add 1teaspoon of white vinegar. Stir very well until the egg whirlpools the center poach for a few minutes and remove the egg.

Garnish the pasta with parmesan and egg.
