Easy Peasy Chilly Lemon Pie
Ingredients 12 x arrowroot biscuits 1/4 x cup caster sugar 1/4 x cup melted butter Filling1 x cup thickened cream 1/4 x cup icing sugar, plus extra to dust 2 x tsp vanilla extract 280g jar of lemon curd 250g cream cheese 1/2 x cup condensed milk 1 x lemon, zest only to serveInstructionsPreheat oven to 180C. Break biscuits into pieces, place in a food processor, and process until fine crumbs. Add melted butter and sugar and process until well combined. Press the crumbs firmly into a 24cm round pie dish. Place on a baking tray and bake for 5 minutes until lightly golden. Set aside to cool. To make the filling, whip the cream, icing sugar, and vanilla until stiff peaks. Set aside. In a clean bowl, add the lemon curd, cream cheese, and condensed milk and beat until smooth. Gently fold in 3/4 cup of the whipped cream into the lemon curd mixture until combined. Pour the filling into the cooled pie shell. Top with remaining whipped cream and use the back of a spoon to spread it out. Freeze uncovered for at least 2 hours. Serve with a dust of extra icing sugar and lemon zest.
