Couscous Salad

 

Ingredients for Grapefruit Salad

3/4 x cup low sodium chicken stock
3/4 x cup uncooked whole couscous 
2 x large avocados -
2 x large ruby red grapefruit
1 x can white beans or any beans 
1/2 x cup crumbled feta cheese
3 x tablespoons fresh mint
3 x tablespoons fresh cilantro

Ingredients for Dressing

3 x tablespoons fresh lime juice
2 x tablespoons honey
2 x tablespoons virgin olive oil
1/4 x teaspoon kosher salt

Instructions

Boil the stock and add in the grapefruit mix very well for a few minutes and rest it aside. Bring a small bowl and add the lime juice, honey, virgin olive oil, and kosher salt. Stir the ingredients very well and set aside. Now, over the large bowl, the ingredients needed to be combined beans and couscous then put the dressing on top. Add the remaining items such as the grapefruit, fresh mint, fresh cilantro, feta and avocados. Mix and stir very well and serve at a room temperature or you can choose to have it chilled
