Ep #13 recipes - chicken parmigiana
*1/2 chicken breast (120-160g)
*2 weet bix
*1-tsp mixed herbs
*2-tbl spoons Parmesan
*1-tsp olive oil
*2-tbl spoon mozzarella
*1-tsp lemon juice
Garden salad side
*1-cup mixed lettuce leaves
*30g feta cheese
1) crush the weet bix in a mortar and pestle and add 1-tsp mixed herbs.
2) Blend mozzarella and 2 tomatoes in a blender and leave to the side.
3) whisk an egg in a bowl and dip chicken breast in coating both sides before crumbing in weet bix crumbs.
4) heat olive oil in a pan and cook for 3mins each side.
5) Place chicken breast under the grill and top with tomato and mozzarella paste and Parmesan cheese and grill for a further 3mins or until cheese has melted.
6) chop all salad ingredients together and serve as a side with lemon juice dressing.
