Chicken & mushrooms
4 x Chicken Maryland's
300g x Enoki Mushrooms
1 tsp sea salt and cracked black pepper
1 tsp extra virgin olive oil
Preheat oven to 180'c.
season chicken with salt.
When oven is warmed place chicken Maryland's in skin down and roast for 45 mins or until cooked. Remove from oven and leave chicken to cool on a plate for 5 mins.
Meanwhile add the Enoki mushrooms to the chicken juice and sautè for 2 mins until tender. season with salt and pepper.
serve chicken Maryland's onto a plate and divide the enoki mushrooms evenly. squeeze with lemon and serve.
