BLT Eggs


  • 6 large eggs
  • 100g diced bacon
  • 1/4-cup mayonnaise 
  • 1tbsp chopped chives
  • 1tsp red wine vinegar 
  • 1tsp chilli sauce
  • sea salt
  • black pepper
  • 1/2-cup cherry tomatoes
  • 1/2-cup shredded lettuce 


  • Place eggs in a large pot and cover with an inch of water.
  • Meanwhile, heat a large skillet over medium heat. Add bacon and cook until crisp, remove from pan and drain on a paper towel covered plate.
  • In a medium bowl, whisk to combine mayonnaise, chives, red wine vinegar and hot sauce. Season with salt and pepper.
  • Peel and halve eggs, spread mayo mixture on one side of egg. Top with tomato, bacon, lettuce and place the other egg half. Season with salt and pepper to serve.
